Homemade Crab and Shrimp Seafood Bisque

– 1 lb crab meat, picked over for shells
– 1/2 lb shrimp, peeled and deveined
– 4 tablespoons unsalted butter
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 celery stalk, diced
– 1 carrot, diced
– 1/4 cup tomato paste
– 4 cups seafood stock
– 1 cup heavy cream
– 1 teaspoon Old Bay seasoning
– 1/2 teaspoon cayenne pepper (adjust to taste)
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

1. In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrot, and sauté until the vegetables are softened, about 5-7 minutes.
2. Stir in the tomato paste and cook for another 2 minutes, allowing the flavors to meld.
3. Pour in the seafood stock and bring to a simmer. Add the Old Bay seasoning, cayenne pepper, salt, and pepper.
4. Let the bisque simmer for about 20 minutes to develop flavors.
5. Using an immersion blender, blend the mixture until smooth. If you prefer a chunkier texture, blend only half of the bisque.
6. Return the pot to medium heat and stir in the heavy cream. Add the crab meat and shrimp, cooking until the shrimp are pink and cooked through, about 5-7 minutes.
7. Taste and adjust seasoning as necessary. Serve hot, garnished with fresh parsley.
