Creamy Cucumber Salad


Ingredients:

2 large English cucumbers, thinly sliced
½ medium red onion, thinly sliced
2 tbsp fresh dill, chopped
1 clove garlic, minced
2 tbsp lemon juice
½ cup sour cream
2 tbsp mayonnaise
½ tsp salt
¼ tsp black pepper

Instructions:

Prepare the cucumbers: Thinly slice the English cucumbers using a sharp knife or mandoline slicer. Place the cucumber slices in a large mixing bowl.
Slice the onion: Thinly slice the red onion and add it to the bowl with the cucumbers.
Chop the dill: Finely chop the fresh dill and sprinkle it over the cucumber and onion mixture.
Mix the dressing: In a separate small bowl, combine the minced garlic, lemon juice, sour cream, mayonnaise, salt, and black pepper. Stir until smooth and well combined.
Combine salad and dressing: Pour the dressing over the cucumber, onion, and dill mixture. Toss everything together until the vegetables are evenly coated with the creamy dressing.
Chill the salad: Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
Serve: Serve the creamy cucumber salad cold, garnished with extra dill if desired. Enjoy as a refreshing side dish!

Notes:

For a lighter version, you can use Greek yogurt instead of sour cream.
