3-4 ripe peaches, sliced thinly

¼ cup granulated sugar

1 tsp ground cinnamon

1 tsp vanilla extract

1 tbsp lemon juice

beaten egg (for egg wash)

powdered sugar for dusting (optional)

Instructions:

Preheat the Oven:

Prepare your oven in advance by setting it to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry:

On a lightly floured surface roll out the puff pastry to remove creases. Cut the pastry into 6 squares of equal size.

Prepare the Peaches:

Place peach slices in a medium bowl and then sprinkle granulated sugar, cinnamon, vanilla extract and lemon juice over them; toss until well coated.

Assemble the Pastries:

Take some peach slices and place on each puff pastry square at its center. Do not forget to leave small edges uncovered.

Fold back corners of each square on top of peaches and seal by pressing gently.

Apply the Egg Wash:

To have golden smooth finish brush beaten egg at the pastries’ edges.

Bake:

Now transfer these pastries onto your lined baking sheet. Bake them for about 15-20 minutes or until golden brown on top with puffed dough.

Cool and Serve:

Let the pastries cool on a wire rack for some time in order to serve them with powdered sugar.

Hints for Success:

Be sure to have fully defrosted puff pastry in order to avoid breakage.

Use ripe but firm peaches for optimal texture and taste.

Make sure you seal edges well so that when cooking, the peach juice does not ooze out of the pie.

Health Benefits:

Peaches are high in vitamin A, C, antioxidants and fiber.

Using puff pastry instead of traditional pie crust gives you a light fluffy texture without the extra calories.
