Fruit and Nut Icebox Cake recipe

Ingredients:

2 cups heavy cream (500ml)

1 can sweetened condensed milk (14 oz/400 g)

1 teaspoon vanilla extract

2 cups mixed candied fruit (e.g. cherries, pineapple, papaya, mango) 400g

1 cup mixed nuts (e.g. almonds, walnuts, cashews) 150g

Crushed digestive biscuits or graham crackers 200g

¼ melted butter 60 ml

Instructions:

Prepare the Base: In a mixing bowl combined crushed digestive biscuits or graham crackers with melted butter. Mix until well combined.

Press the mixture into the bottom of a loaf pan lined up evenly.

Prepare the Cream Mixture:

Mix heavy cream in a large bowl until it forms soft peaks.

Gradually add in sweetened condensed milk with stirring continuously until fluffy and well incorporated.

Add Fruits and Nuts: Fold gently using mixed candied fruits and nuts distributing them equally.

Make the Cake:

Spread it evenly over the prepared biscuit base, then pour in the cream mixture.

After you try to smooth out top with a spatula, cover the loaf pan with plastic wrap or foil.

Freeze:

Until fully set, put the pan into freezer for at least 4-6 hours.

Serving:

As soon as cake has set, remove from loaf pan and cut into bars or squares.

Serve right away and enjoy!

For best results ensure that cream is cold prior to whipping.

In case of large candied fruits, chop them smaller pieces so as to distribute them evenly.

To get a firmer texture, allow cake freezing overnight.
