Grilled Steak Tacos with Fresh Guacamole

Ingredients:

1 lb flank steak
Salt and pepper to taste
1 tablespoon olive oil
8 small corn tortillas
1 ripe avocado
1 lime, juiced
1 small tomato, diced
1/4 onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup cilantro, chopped
1 clove garlic, minced
1/2 teaspoon cumin

Directions:

Prepare the Guacamole:
In a bowl, mash the avocado with the lime juice. Stir in the tomato, onion, jalapeño, cilantro, garlic, and cumin. Season with salt and pepper to taste. Set aside.
Cook the Steak:
Season the flank steak with salt, pepper, and olive oil.
Heat a grill or skillet to high heat. Grill the steak for about 5-7 minutes per side or until desired doneness is reached. Let it rest for 5 minutes, then slice against the grain into thin strips.
Assemble the Tacos:
Warm the tortillas on the grill or in a skillet. Divide the steak slices among the tortillas.
Top each taco with a generous spoonful of guacamole.
Serve immediately, optionally with extra lime wedges and cilantro.
