Cabbage Fritters

Ingredients:

2 cups shredded cabbage

1/2 cup regular flour

1/4 cup corn flour

1/4 cup grated parmesan cheese

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

1/3 cup milk

beaten egg 1.

Instructions:

Shred the cabbage into large bowl then add flour, cornmeal, Parmesan cheese, baking powder, salt, pepper and paprika if needed.

In another bowl mix together beaten eggs with milk.

Pour in the milk-egg mixture into the cabbage then mix until well coated evenly by the batter.

For frying use oil in a large skillet or frying pan which is heated over medium heat until hot enough.

Drop spoonfuls of the cabbage batter into the hot oil pressing them down slightly with back of spoon.

Take fritters out of oil and set them on a paper towel-covered plate to eliminate excess oil.

Serve hot, optionally along with salsa or sour cream.
