Ingredients:

1 packet (16 ounces) phyllo dough, thawed

1½ cups crumbled feta cheese

½ cup chopped parsley

2 eggs, whisked

½ cup unsalted butter, melted

Salt and pepper to taste

A garnish on top with sesame or nigella seeds (optional).

Instructions:

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease with butter.

Prepare the Filling: In a bowl for mixing, crumbled feta cheese, chopped parsley, beaten eggs, and some pinches of salt and pepper. Stir until all ingredients are well combined. Put this filling aside.
Assemble the Börek: Unroll phyllo dough and lay it on a dry surface area. Then put a damp kitchen towel over it to prevent drying. Spread one sheet of phyllo dough out flat on your work surface. Lightly brush melted butter onto the sheet of phyllo dough. Place another sheet of phyllo dough on top of it and apply butter to the top as well. Repeat this process using 6-8 sheets of phyllo dough stacked together.
Add the Filling: Spoon some of the cheese mixture onto one end of the stack of phyllo dough leaving a small margin empty around it. Roll up the filo pastry enclosing the filling into a long shape piece or log. Fold in edges to seal in filling as you do with flour tortillas or other burritos; continue doing this with remaining stack, until you complete all pieces
Bake the Börek: Put the prepared baking sheet on top of it, once again, and just make sure that downward sides are in position. For more taste and decoration, brush extra melted butter onto their tops and sprinkle with sesame seeds or nigella seeds if you wish. The börek should be golden brown and crispy after being baked in an already heated oven for 25-30 minutes.
