Nana’s Berry Bliss Frozen Fruit Salad

Ingredients

1 package (8 oz) cream cheese, softened
1/2 cup granulated sugar
1 can (8 oz) crushed pineapple, drained
1 cup sliced strawberries
1 cup blueberries
1 cup raspberries or blackberries (or a mix of both)
1/2 cup chopped pecans or walnuts (optional)
1 tub (8 oz) whipped topping, thawed
1 teaspoon vanilla extract

Directions

Cream Cheese Mixture:

In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. This will form the base of your fruit salad salad.

Mix Fruits:

Gently fold in the drained crushed pineapple, sliced strawberries, blueberries, and raspberries/blackberries into the cream cheese mixture. If you’re using nuts, add them in this step. Be careful not to crush the berries while mixing.

Add Whipped Topping:

Fold in the whipped topping and vanilla extract into the fruit and cream cheese mixture until well combined. Ensure the mixture is uniform but still fluffy.

Freeze:

Transfer the mixture into a baking dish or a mold of your choice. Smooth the top with a spatula to ensure even freezing. Cover with plastic wrap or aluminum foil.

Freezing Time:

Freeze the salad for at least 4 hours, or overnight, until it’s firm.

Serve:

Before serving, remove the dish from the freezer and let it sit at room temperature for about 10-15 minutes to soften slightly. This will make it easier to slice or scoop.
