Ginger Soy Glazed Cod Recipe

Ingredients:
• 4 cod fillets
• Salt and pepper, to taste
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• 1/4 cup soy sauce
• 2 tbsp honey
• 1 tbsp rice vinegar
• 1/2 tsp sesame oil
• 2 green onions, thinly sliced
• 1 tsp sesame seeds (optional, for garnish)
• Lime wedges (for serving)

Directions:
1. Prepare the Cod: Season the cod fillets with salt and pepper on both sides.
2. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the cod from the skillet and set aside.
3. Make the Glaze: In the same skillet, add the minced garlic and grated ginger. Cook for about 1 minute, until fragrant. Stir in the soy sauce, honey, rice vinegar, and sesame oil. Bring to a simmer and cook for 2-3 minutes, until the glaze thickens slightly.
4. Glaze the Cod: Return the cod fillets to the skillet and spoon the glaze over them. Cook for another 1-2 minutes, basting the fish with the glaze until well-coated.
5. Serve: Transfer the glazed cod to serving plates. Garnish with thinly sliced green onions and sesame seeds. Serve with lime wedges on the side.
