– 1 pound ground beef
– 1 cup matchstick carrots
– 1 red bell pepper, sliced
– 2-3 scallions, roughly chopped
– 3 garlic cloves, minced
– 1/2 cup low sodium soy sauce
– 1/2 cup brown sugar
– 1 (14.5 ounce) can chicken stock
– 2 ramen noodle packets (seasoning packets discarded)
– Sesame seeds for garnish (optional)
– Scallions for garnish (optional)

INSTRUCTIONS:
1. Start by browning the ground beef in a skillet, then drain the excess fat.
2. Transfer the cooked beef into the slow cooker.
3. Add the matchstick carrots, sliced red bell pepper, and roughly chopped scallions to the slow cooker.
4. In a bowl, whisk together minced garlic, soy sauce, brown sugar, and chicken stock until well combined.
5. Pour this sauce mixture over the ingredients in the slow cooker and stir everything together.
6. Cover and cook on low for 4 to 6 hours.
7. About 30 minutes before serving, add the dry ramen noodles into the slow cooker, discarding the seasoning packets.
8. Stir frequently to ensure the noodles soften evenly and absorb the flavors.
9. Once the noodles are tender, serve the dish hot.
10. Optionally, garnish with extra scallions and sesame seeds for added flavor and texture.
