CHILLED CUCUMBER RANCH CRACK SALAD
Ingredients:
2 large cucumbers, diced
1 cup cherry tomatoes, halved
1/2 small red onion, finely chopped
1/2 cup shredded cheddar cheese
1/2 cup cooked and crumbled turkey bacon
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons ranch seasoning mix
Salt and black pepper to taste
2 tablespoons chopped fresh chives or green onions (optional)
Directions:
In a large bowl, combine the diced cucumbers, halved cherry tomatoes, chopped red onion, shredded cheddar cheese, and crumbled turkey bacon.
In a separate small bowl, whisk together the sour cream, mayonnaise, ranch seasoning mix, and a pinch of salt and black pepper until smooth.
Pour the dressing over the cucumber mixture and gently toss to combine until everything is evenly coated.
Cover the bowl and refrigerate for at least 30 minutes to chill and allow flavors to blend.
Before serving, stir gently and sprinkle chopped chives or green onions on top if desired. Serve cold.
