FRIED POTATOES ONIONS AND SMOKED POLISH SAUSAGE


Ingredients :
1½ pounds of russet potatoes, diced into 1/2″ cubes
1 pound of sliced smoked sausage
2 tablespoons of olive oil
½ teaspoon of seasoned salt
½ teaspoon of Italian seasoning
½ large red bell pepper, diced
½ large green bell pepper, diced
1 small onion, diced
Black pepper to taste
Shredded parmesan cheese, for garnish (optional)


Directions :
Saute the Onions: In a large pan, sauté the diced onion in 1 tablespoon of butter over medium heat until translucent and soft. Set aside.
Prepare the Potatoes: In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil until melted. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Cover and simmer, turning occasionally, for 15 minutes or until the potatoes are somewhat softened.
Add the Sausage: After 15 minutes, add the sliced smoked sausage to the skillet with the potatoes. Cook for an additional 10 minutes, stirring occasionally, until the sausage is heated through and the potatoes are golden brown and crispy.
Cook the Peppers: While the potatoes and sausage are cooking, combine the diced red and green bell peppers in a separate skillet. Sauté until the peppers are soft yet still crisp.
Combine and Serve: Once the potatoes, sausage, and peppers are cooked, combine them in the skillet with the sautéed onions. Stir gently to mix all the ingredients. If desired, sprinkle shredded parmesan cheese over the top before serving.
