This honey garlic confit recipe is simple, flavorful, and easy to keep in the fridge for adding to toast, roasted vegetables, chicken, pasta, or dressings. The garlic becomes soft, mellow, and slightly sweet, and the oil turns wonderfully aromatic too.
Ingredients
- 3 cups peeled garlic cloves
- 2 to 2 1/2 cups olive oil, enough to cover
- 2 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper, optional
- 1 teaspoon dried thyme or rosemary, optional
- pinch of chili flakes, optional
Instructions
1. Add everything to a saucepan
Place the peeled garlic cloves in a small saucepan.
Pour in the olive oil until the garlic is fully covered.
Add the honey, salt, black pepper if using, herbs if using, and chili flakes if desired.
2. Cook gently
Set the saucepan over very low heat.
Let the garlic cook gently for about 35 to 45 minutes.
You want a very light simmer, not a hard boil. The garlic should become soft and lightly golden, not browned too deeply.
3. Cool
Remove from the heat and let it cool completely.
The garlic should be soft enough to mash easily with a fork.
4. Store
Transfer the garlic and oil to clean jars.
Keep refrigerated and use within 1 week.
