Christmas Salad with Apples, Pomegranate & Nuts
Ingredients:
For the Salad:
6 cups mixed greens (arugula, spinach, or spring mix)
1 green apple, thinly sliced
1/2 cup pomegranate arils
1/3 cup walnuts or pecans, toasted
1/4 cup crumbled feta or goat cheese
Optional: 1/4 cup dried cranberries
For the Dressing:
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and black pepper, to taste
Instructions:
Make the Dressing:
In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
Assemble the Salad:
In a large bowl or serving platter, layer the mixed greens as a base. Arrange the apple slices, pomegranate arils, toasted nuts, and dried cranberries (if using) over the greens.
Add Cheese:
Sprinkle crumbled feta or goat cheese evenly over the salad for a creamy and tangy contrast.
Dress & Serve:
Drizzle the dressing over the salad just before serving. Toss gently to combine or leave undressed for guests to drizzle individually.
Festive Touch:
Garnish with additional pomegranate arils or a sprig of rosemary for a holiday flair.
