Blackened Salmon Stuffed with Spinach & Parmesan

Ingredients:
– 4 salmon fillets (skinless, about 1.5 inches thick)
– Salt and black pepper to taste
– 1 tablespoon olive oil
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon cayenne pepper (adjust for spice preference)
– 2 cups fresh spinach leaves
– 1 tablespoon butter
– 1/2 cup shredded Parmesan cheese
– 1/2 cup shredded mozzarella cheese
Directions:
1. Preheat oven to 375°F (190°C).
2. In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
3. Slice each salmon fillet horizontally to create a pocket (be careful not to cut all the way through).
4. Season both sides of the salmon and inside the pocket with the spice mixture.
5. In a skillet, heat the butter over medium heat. Add spinach and cook until wilted, about 2 minutes. Remove from heat and mix in the Parmesan and mozzarella cheeses.
6. Stuff each salmon fillet with the spinach and cheese mixture.
7. In an oven-safe skillet, heat olive oil over medium-high heat. Sear the salmon for 2-3 minutes on each side until a crust forms.
8. Transfer the skillet to the oven and bake for 8-10 minutes or until salmon is cooked through and cheese is melted.
